What IBUs Really Mean (and Don’t Mean)

If you’ve spent much time looking at beer menus, tap lists or can labels, you’ve probably seen three letters pop up alongside ABV:

IBU.

Maybe you’ve even used that number to decide whether you’ll like a beer. Twenty IBUs? Sounds easy. Seventy? Better prepare yourself.

There’s just one problem.

IBUs don’t actually tell you how bitter a beer will taste.

At least, not by themselves.

First, What Is an IBU?

IBU stands for International Bitterness Unit.

It’s a measurement brewers use to quantify certain bitter compounds in beer, primarily iso-alpha acids created when alpha acids from hops are isomerized during the brewing process.

Generally speaking, adding more bittering potential to a beer results in a higher IBU measurement.

That makes IBUs useful to brewers.

But when you take that laboratory measurement and try to translate it directly into what your tongue is going to experience, things get complicated.

50 IBUs Doesn’t Always Taste Like 50 IBUs

Imagine two beers that both measure 50 IBUs.

One is a light-bodied, dry beer with very little residual sweetness. The other has a bigger malt backbone, more body and noticeable sweetness.

They may have the same measured bitterness, but they’re probably not going to taste equally bitter.

That’s because your perception of bitterness depends on everything else happening in the glass.

Malt sweetness can balance bitterness. Alcohol can change how flavors are perceived. Body, carbonation, water chemistry and other ingredients can all influence the overall experience.

The IBU number hasn’t changed.

Your perception has.

Balance Matters More Than the Number

This is probably the biggest thing to understand about IBUs:

Bitterness exists in context.

Think about adding lemon juice to water versus adding the same amount to a sweetened drink. The acidity is still there, but the surrounding ingredients change how intensely you perceive it.

Beer works similarly.

A high-IBU beer with enough malt character to balance it may seem surprisingly approachable. Meanwhile, a lower-IBU beer that’s very dry and light-bodied can have bitterness that seems much more noticeable.

That’s why comparing two beers solely by their IBU numbers can be misleading.

Hoppy and Bitter Aren’t the Same Thing

This is where things get especially interesting.

People often use “hoppy” and “bitter” as though they mean the same thing.

They don’t.

Hops can contribute bitterness, but they also provide aroma and flavor. Depending on the variety and how they’re used, hops can remind you of citrus, tropical fruit, pine, flowers, herbs, berries, stone fruit and plenty of other things.

When hops are added during the brewing process matters, too.

Hops boiled for longer periods generally contribute more bitterness. Hops used later in the process can emphasize flavor and aroma instead. Dry hopping (adding hops during or after fermentation) can load a beer with hop aroma without producing the same bitterness you’d get from boiling those hops.

That’s how a beer can smell and taste extremely hoppy without necessarily being extremely bitter.

Hazy IPAs Are a Great Example

Modern hazy IPAs demonstrate the problem with using IBUs as shorthand for “how intense is this beer?”

A hazy IPA can be packed with hops and explode with tropical and citrus character while presenting a relatively soft bitterness.

Compare that with a traditional West Coast IPA, where a drier finish and more assertive bitterness may make the hops seem sharper.

Both can be intensely hop-forward.

They’re simply expressing those hops differently.

So if someone tells us they “don’t like hoppy beers,” one of the first things we’d want to know is what they actually mean.

Do they dislike bitterness?

Or do they dislike hop flavor and aroma?

Those aren’t necessarily the same answer.

Can Humans Even Taste the Difference Between Really High IBUs?

There’s another wrinkle at the extreme end of the scale.

As bitterness gets increasingly intense, our ability to perceive small differences becomes less useful. A beer advertised at 100 IBUs isn’t necessarily going to taste twice as bitter as one at 50.

Human sensory perception just doesn’t work like a perfectly calibrated meter.

And brewing calculations aren’t perfect predictors of what’s actually in the finished glass, either. Hop utilization varies, and some bitter compounds can be lost throughout fermentation and packaging.

So chasing the biggest possible IBU number tells you surprisingly little about whether the finished beer is actually enjoyable.

So Why Do Brewers Use IBUs?

Because they’re still useful.

For brewers, measuring or estimating bitterness helps with recipe development, consistency and quality control. If we’re brewing the same beer repeatedly, having measurable targets gives us another way to make sure today’s batch resembles the one we brewed before it.

IBUs can also give drinkers a general clue about a beer when combined with other information.

A 10-IBU beer and a 70-IBU beer were probably designed with very different bitterness levels in mind.

Just don’t assume the number tells the whole story.

It doesn’t.

What Should You Look at Instead?

If you’re trying to figure out whether you’ll enjoy a beer, don’t stop at the IBU number.

Look at the style. Read the description. Pay attention to words like crisp, dry, malty, juicy, balanced, piney, citrusy, roasty or sweet.

And when you’re at a taproom, there’s an even easier solution:

Ask.

Instead of saying, “What’s your lowest-IBU beer?” try telling your bartender what you’re actually looking for.

“I don’t like much bitterness.”

“I want something really hop-forward.”

“I like citrusy IPAs but not piney ones.”

“I want something crisp and dry.”

Those descriptions tell us a lot more about what you’ll enjoy than a single number ever could.

IBUs Are a Measurement, Not a Flavor

That’s the big takeaway.

IBUs measure something real, and they’re an important tool in brewing. But they aren’t a bitterness score, a quality rating or a guarantee of what a beer will taste like.

Beer has too many ingredients interacting with one another for that.

So the next time you see 65 IBUs printed next to a beer, don’t automatically assume you’re about to get punched in the tongue by a hop cone.

Take a sip first.

Your taste buds get the final vote.
